yes, this just happened to me.

The Magical Apron

There once was a girl.
Her mother didn't know how to use measuring devices,
so cooking was a guessing game.
This girl didn't practice cooking often,
for her days were full of music and reading.

The girl grew up and she went off to school in a far away land.
In this land, her meals were prepared for her,
and she grew used to no work, but all reward.

One year later, the girl moved to a different far away land,
a land drastically different from anywhere she'd been before.
The girl had to cook and clean all for herself!
The cleaning was not hard, for she was a meticulous little girl
and had learned to keep things organized.
Cooking was a different story.
The girl did not know how to properly shop for groceries,
and she lacked the basic ingredients to make delicious foods.

With no time to prepare, and little resources, the girl took the easy route.
Frozen food.
She tried everything!
from Smart Ones, to Michelina's.  Lean Cuisine, Bertolli, and even PF Changs.
The Healthy Choice Cafe Steamers she liked the most,
but even they could not satisfy her desire for real delicacies.

One holiday season, the girl returned home to visit her family.
With her, she brought gifts.
For her mother, a new apron!
The girl had brought a matching apron for herself,
with the promise that she would cook two meals for the family over the break.

The girl went right to work preparing meals.
In doing so, she discovered something amazing.
The apron was magic!
Every time the girl put on the apron, she felt empowered to cook!
Trips to the grocery store were productive,
the oven worked properly,
and everything turned out delicious the first time!

She became a cooking machine.
Chicken fettuccine, omelette's, delicious salads!
Pasta, hand breaded Parmesan chicken, and her grandmother's famous blintzes!

She fell in love with cooking,
and all has been well in the Kingdom ever since : )

White winter

Provo is white with snow again : )

I had to go home between classes to put on different shoes and a warmer coat.

I know some of you dislike the snow,
but for a southern girl,
this is completely foreign to me.
And I find it beautiful.

Ice = bad.
Snow = amazing.

So Provo, will you please stay winter white for me?

Thursday night


I went here. 
It was so good : )

blanket forts and blintzes

Today, I made my grandmother's famous blintzes.
They are seriously the most delicious thing on the planet.
A tradition in my family : )

CHEESE BLINTZES
Batter: 
2 eggs
1 cup milk 
3/4 cup sifted flour

Beat eggs well.  Add flour all at once.  Add milk gradually and beat to a smooth batter.  This will make a very thin batter.

Cheese Filling
1 lb cottage cheese
2 tsp sugar
1 egg yolk
8 oz package creamcheese

Melt butter in a skillet.  Pour in 2 tablespoons of batter, swirling around to make a circle. 

Fry until lightly brown on bottom and turn out on waxed or parchment paper, browned side up.  Fill pancakes with a table spoon of cheese filling and fold over from both sides and then into an envelope shape. 
   
Just before serving, fry in a little butter in a hot skillet until a golden brown color on both sides. 

Serve hot with cinnamon and sugar, powdered sugar, jam, whipped cream, fresh fruit, etc. 
My favorite growing up was powdered sugar and strawberries : )

You can also freeze the blintzes before serving them and eat them later!
They kind of take a while to make, so I prefer making them the night before then just frying them the next day.


Also, Kelly and I made a blanket fort clubhouse. 
No boys allowed. 
You even have to know the password to come in!

not going to lie

sometimes it is really hard for me to accept certain things.
I thought perhaps it might change.
and it has... slightly
But I am still often discouraged.

Last week, when reading my PB
I was reminded that the Lord has a plan for me.
He has it all picked out,
and maybe things aren't changing for a reason.
If they did, perhaps it would happen prematurely.

As uneventful as that makes life right now,
at least I know that it will work out.
The Lord has something very special in the plans for me.
I just have to agree not to mess it up :  )

Luau


Last year, I attended this beautiful university;
the experience of a lifetime to say the least.

Unfortunately, I could not stay forever - 
BUT I still have the chance to be involved with the amazing Polynesian culture.

At 6 AM this morning, 
I attended rehearsals for the BYU Multicultural Luau, 
a performance to raise scholarship money for international students.
Every Saturday morning I will be up in the Wilk dancing away, 
reminiscing...

I guess this will have to suffice until I see that beautiful island again.

Also, 
a funny thing happened this evening. 

Kelly and I were walking down the ramp to the parking garage, 
discussing the wonderful things we were going to get at Target for our poor poetry party,
when simultaneously
we both began to slip.
We screamed 
and slid about 15 - 20 feet
all the way down the ramp, 
clutching each other as we tried to stay on our feet. 
Thankfully we did. 
Then laughed hysterically for a solid minute and a half. 

It was kind of cool, surfing on ice.
But I'd prefer it not happen again : )

Condoleezza Rice

Condoleezza Rice spoke today at a BYU Forum.
It was AMAZING.  
this post will be long, but I thought I would share my notes

To start off, did you know that Dr. Rice is one of my biggest idols?
I almost cried many times today.
It was so overwhelming, I can't even explain.

AND she's from Birmingham, Alabama : )



now, for her thoughts:
"Today's headlines and history's judgement are rarely the same"

It is not the large countries that we should be worried about war with. A broken, FAILED, weak country, Afghanistan attacked us.  Ironically, Taliban means students, so a group of students attacked our country. 

Every man, woman and child deserves to live in freedom.  The United States is the only country who truly advocates this truth. 

Every dictator fears the moment when their people no longer fear them. 

Creativity and innovation remain the forte of the United States. 

Despite the bad thoughts, people are glad that the U.S. is there to fight battles, aids, hunger, and tragedy. 

It doesn't matter where you came from, it matters where you are going... 
that is what draws people to the United States. We want people who are energetic and ambitious to be a part of the U.S. for generations to come. 

There is a transforming power about education.

Our greatest national threat is the decay of our k-12 educational system.

We are not held together by religion, blood, or nationality.  We are held together by the American myth/dream. 

Faith and education combined - the essence of being human is to integrate the knowledge of what is with the truth of what might be

Find your passion - what will make you get up every day and say, "I want to do this."  Take the time to find your passion and opportunities will open up that you never imagined. 

When you overcome something that is hard, you know you can handle all of life's challenges.  
So take something hard.

Take advantage of the study abroad opportunities, learn languages,
KEEP YOUR OPTIMISM.
As educated people, you have a responsibility to be optimistic. If we cannot be optimistic, with all the opportunities available to us, then who can be?

You might not be able to control your circumstances - but you can control your response to those circumstances.

When feeling non-optimistic, remember that
What at the time seems impossible - 
in retrospect often seems inevitable


Though Dr. Rice is of the Presbyterian faith, I actually received a lot of Gospel insight in her words.

We are aware of the large threats to our personal happiness and eternal salvation - pornography, adultery, addiction, etc. - but more often than not, it is the smaller things that will take us down.  Becoming relaxed in our daily studies and prayer, not paying our tithing, service.  Overlooking these things will allow the ultimate terrorist, Satan, to attack us. 

The Atonement is one of the greatest blessings of the Gospel, it is what allows us to return to our Heavenly Father.  None of us are perfect, and without the Saviors ultimate sacrifice, we would not be able to return to live with him again.  It is absolutely true, "It doesn't matter where you came from, it matters where you are going."  It doesn't matter what mistakes you have made, we have the opportunity to be cleansed of it all. Through baptism, repentance, and through taking the sacrament every week. 

We are all given trials.  How we handle our trials defines who we are. We all have the capability to overcome every trial that is laid before us. It is hard, very hard.  But not impossible. Embrace the trial with absolute faith. When you make it through, you will be a thousand times happier, stronger, more faithful than before.  You will look back on that period in your life, grateful for the trial; for without it, you would not be the person you are now. 

I could go on and on about my thoughts from this forum, but this post is already way past long.
It was amazing. Period.
If you ever have the opportunity to hear her speak
DO IT.
You will not regret it.

I don't want you to give in to the pressure of the moment.  Look through it and get through the day.  Don't look ahead to the pain, just get through the day. Take it one day at a time. 

our consistency in small simple things can lead to great things.  Even the mundane daily tasks become the building blocks of a great and glorious future....

before bed each night, think about the successes and failures of the day and thank the Lord for the manna he gave you

3:00 A.M. last night, 
finally heading to bed after far too many hours of school work
a date
and a movie with Kelly.
I check yet again to see if a spot had opened up;
doubtful.
To my surprise, there is ONE spot.
I reloaded the page multiple times to make sure I wasn't dreaming.
But it was there, 
that Glorious spot, 
the spot that at least 14 other people are praying for too,
the spot that will make my semester a million times better.
So I took it.
And I am so very incredibly happy.

Thank you, thank you, thank you.
The Lord works in mysterious ways.

bye bye social life


Already spending 10+ hours a day on school work.
CS/ECEn lab work hasn't even started yet. 

Well, it was nice hanging out with everyone last semester!
You will see me at church,
and maybe the grocery store. 
But if you don't catch me, 
I can be found one of the following places:

1. the Math Lab. 
(159 TMCB)
2. the Physics Lab
(N361 ESC)
3. various computer labs in the Talmage or Clyde
(TMCB back wing or CB 4th floor)
4. hidden in my bedroom.

Though our meetings may be few, I do still love you all.
Have a wonderful semester, and I will see you at the end
if I make it that is.

ME


People ask how it feels going to a school
where practically everyone is 
good looking, smart, musically talented, funny, honest, spiritual, hardworking, friendly, etc etc

my response,
I LOVE IT.

Not only am I able to surround myself with intellectual human beings, 
but ones who are sober,
ones who share the same values as me,
and ones who want the same things out of life that I do.

I know a lot of people who, 
at home, 
are the smartest, most talented and intriguing people their town/highschool/city has ever seen.
Then they come here and feel like just another person.
They don't feel special anymore
because almost everyone here was top of their class, talented, and incredibly well rounded.
And sometimes, they feel a little overshadowed.

Not me.
I am not just another person.
I am somebody.
A somebody who knows without a shadow of a doubt that she has something very unique to offer.
A somebody who is not afraid to go for what she wants.
A somebody who will do all that it takes.

There is no other ME.

That fact keeps me going.

Bring on the new semester, let's see what you're made of.
